Hummus and Cheesy Tomato Sandwich
Sometimes a sandwich just hits the spot. This is a great version of a cheesy, tomato sandwich but much healthier for you!

  1. Toast bread or bagel (slice bagel in half). Meanwhile, mix some of the green onion into the hummas with a generous amount of black pepper (if desired).
  2. Slather on toast, top each piece with a tomato slice or two, sprinkle with nutritional yeast, salt and pepper. Garnish with green onion and eat open faced. Eat remaining tomato on the side.
