Mimi’s Potato Salad
A simple yet delicious potato salad without all the unhealthy mayo.

Instructions
  1. Boil potatoes until tender, drain and cool several hours
  2. When potatoes are cold, cut into chunks
  3. Add the vinegar and olive oil, shallots, parsley, salt and pepper
  4. Mix thoroughly.
  5. Then add more white wine vinegar and olive oil to taste. Its hard to give measurements with this as you just keep adding until you get the taste you desire.
  6. Chill before serving.
