Prepare rice according to package directions. Let sit for 5-10 minutes, then fluff with a fork.
In a large bowl, whisk oil and lime juice. Add all the remaining ingredients, including the warm rice, to the dressing. Toss well.
Serve warm or cold.
I used Tru Roots Organic sprouted rice and quinoa blend from costco. I made it according to the package directions using 1 cup rice blend and 1 3/4 cups No Chicken Broth (vegetable broth). It was the perfect amount for the dressing.
