My brother in law brought this to a family dinner and we all loved it!

Ingredients
- 2 cups short grain brown rice
- 3 Tbs olive oil
- 3 Tbs fresh lime juice
- 1/2 cup dried apricots chopped
- 1/2 cup slivered almonds
- 1/2 cup chopped green onions
- 1 cup chopped fresh cilantro
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 2 cups cherry tomatoes halved
- salt and pepper to taste

Instructions
- Prepare rice according to package directions. Let sit for 5-10 minutes, then fluff with a fork.
- In a large bowl, whisk oil and lime juice. Add all the remaining ingredients, including the warm rice, to the dressing. Toss well.
- Serve warm or cold.
- I used Tru Roots Organic sprouted rice and quinoa blend from costco. I made it according to the package directions using 1 cup rice blend and 1 3/4 cups No Chicken Broth (vegetable broth). It was the perfect amount for the dressing.
