Ingredients
- 2 Tbs balsamic vinegar
- 2 Tbs peanut butter
- 1 Tbs reduced sodium soy sauce or coconut aminos to make it soy free
- 1-2 small glove garlic minced
- 1 cup basil leaves
- 1 cup mint leaves
- 1 cup cilantro leaves
- 4 cups thinly sliced napa cabbage
- 1 cup grated carrot
- 1/4 cup roasted peanuts

Instructions
- In a small bowl, whisk together the vinegar, peanut butter, soy sauce, and garlic. Chop the basil, mint and cilantro leaves and toss with the cabbage and carrot. Toss the salad with the dressing and garnish with the peanuts.
- You can easily make this salad even easier if you don't happen to have any basil, mint or cilantro. That happened to me one night as I realized I thought I had everything and didn't. I made the salad with just the cabbage and carrots and it was still really good. I served it along side some fried ginger tofu. Yum!
