- 2 large ripe bananas mashed
- 1 cup of uncooked gluten free rolled oats
- 1/4 cup crushed walnuts
- Variations on recipe: Add cinnamon dark chocolate chips, peanut butter, raisins. Feel free to experiment a little!

Instructions
- Preheat oven to 350 degrees. Spray non-stick cookie sheet with cooking spray.
- Combine the mashed bananas and oats in a bowl. Fold in the walnuts and place a tablespoon fo each on the cookie sheet.
- Bake 15 minutes. Makes approx. 16 cookies
