I love split pea soup! This one is so thick and hearty almost stew like. My brother raved about this soup when he tried it.

Ingredients
- 1 lb dry split peas
- 1 large onion chopped
- 1 large leek chopped white part
- 2-3 carrots chopped
- 2 celery stalks chopped
- 4-5 cloves garlic minced
- 2 Tbs olive oil
- 8 cups vegetable broth or more to desired consistancy
- 2 bay leaves
- 2 Tbs fresh thyme chopped
- 1 Tbs fresh rosemary chopped
- 2 medium potatoes chopped into bite sizes
- salt and pepper

- Directions:
- In a large pot, saute the onion, leek, celery, carrots, and garlic over a medium heat until they are translucent. Add in the split peas, the broth, the thyme and rosemary and bay leaves. Bring to a boil, then turn back down to a simmer. Simmer covered for about 45-55 minutes. Skim off any foam from the top. Add in the potatoes and cook for another 30-40 minutes or until peas are softened and to desired consistency. Stir frequently to prevent solids from burning at the bottom. Salt and pepper to taste. Serve hot.
- Notes:
- I usually add a little more water because my husband likes a more soup consistency, or you can leave it more thick like a stew which is how I like it.
