Sometimes a sandwich just hits the spot. This is a great version of a cheesy, tomato sandwich but much healthier for you!

Ingredients
- 2 slices whole wheat toast or whole wheat bagel or 1 brown rice tortilla or GF bread for a GF option
- 1/4 cup hummus
- 1 tomato sliced
- 1/2 tbsp nutritional yeast
- 1 green onion sliced
- black pepper to taste

Instructions
- Toast bread or bagel (slice bagel in half). Meanwhile, mix some of the green onion into the hummas with a generous amount of black pepper (if desired).
- Slather on toast, top each piece with a tomato slice or two, sprinkle with nutritional yeast, salt and pepper. Garnish with green onion and eat open faced. Eat remaining tomato on the side.
