Ingredients
- Approximately 5lbs of potatoes around 20
- 1/2 cup big vinegar I used white vinegar
- 1/4 cup white wine vinegar - and more to taste
- 1/3 cup extra virgin olive oil - and more to taste
- 2 chopped shallots
- 1 handful chopped parsely
- salt and pepper

Instructions
- Boil potatoes until tender, drain and cool several hours
- When potatoes are cold, cut into chunks
- Add the vinegar and olive oil, shallots, parsley, salt and pepper
- Mix thoroughly.
- Then add more white wine vinegar and olive oil to taste. Its hard to give measurements with this as you just keep adding until you get the taste you desire.
- Chill before serving.
